Overall, there are eight steps in the process, beginning with the delivery of fresh mangoes and ending with the distribution of packaged snacks to shops. Drying is by far the longest stage, and the waste from the fruit is reused rather than thrown away.

First, ripe mangoes are delivered to the factory by truck, and any damaged fruit is removed by hand. The remaining mangoes are then washed in tanks of cold water for around five minutes. After that, a machine removes the skin and the stone, and the fruit is cut into slices about 5 millimetres thick. The skins and stones are collected and sent to a nearby farm, where they are used as animal feed.

In the next stage, the slices are soaked in a light sugar solution for two hours before they are placed on trays in a hot-air dryer. They are dried at 60°C for between 10 and 12 hours. Once this is complete, the slices are cooled at room temperature and checked for moisture. Finally, they are sealed in 100-gram bags and delivered to supermarkets.
